Skillet Chinese Sausage with Oven Roasted Potatoes and Onions

You'll need

  • 4 DiLuigi® Chinese sausages, sliced ½ inch thick
  • 2 tbsp olive oil
  • 3 lbs. new potatoes, yellow or red soft skinned potatoes, quartered
  • 2 cloves garlic, sliced
  • 1 small onion, diced
  • ¼ cup chopped parsley
  • Salt & Pepper as needed

Let’s get cooking!

STEP 1:

Heat large oven-safe skillet on stovetop over medium heat, add oil.

STEP 2:

Put sausage in skillet and brown on all sides.

STEP 3:

Add potatoes to skillet.  Brown potatoes and sausage in preheated 350°F oven until potatoes are tender.

STEP 4:

As soon as the potatoes are tender, toss in chopped parsley, onion and garlic.  Bake an additional 5 minutes.  Serve.  Season with salt and pepper as needed.
